Crock Pot Chicken Taco Enchilada Soup

I couldn’t decide on dinner the other day so I just started putting a lot of stuff in the crock pot and hoped it would taste good!  It was fantastic.  I’m not sure what to call it – Chicken Taco Soup, Chicken Enchilada Soup, Chicken Fajita Soup, Chicken Tortilla Soup?  Any suggestions?

I cut up tortillas and baked them in the oven at 350 for about 20 minutes! They were the perfect touch!

Here is the recipe:

4-5 Boneless Skinless Chicken Breasts
1 can Cream of Chicken Soup
1 can Cream of Celery Soup
1 can Black Beans – Rinsed
1 can Cream of Corn
1 can diced Jalapenos
1 can Diced Tomatoes
1 pkg Fajita Seasoning Mix

Cook in crock pot on low for 5-7 hours.  Shred chicken and return to crock pot.  Serve with Cheese, Chips, Baked Tortillas, etc.

Crock Pot Chicken Taco Chili

Most of you know by now that I’m a huge fan of the crock pot.  It’s so easy to just put the ingredients in there, turn it on, forget about it and have dinner ready when Adam comes home from work.  I tried the Crock Pot Chicken Taco Chili Recipe from Skinny Taste and really liked it!

Start by putting 3 or 4 large Boneless Skinless Chicken Breasts in your Crock Pot.

Then rinse a can of black beans and a can of kidney beans.

Put them in the crock pot.

Pour in one 8 oz can of tomato sauce.

Then add two cans for Diced Tomatoes.

Pour in a packet of Taco Seasoning.

Add 1 Tbs Chili Powder and 1 Tbs Cumin.

Add one chopped Onion and mix it together a little bit.

Cover and cook on High for 6 hours or Low for 10.

Shred your chicken and return to crock pot. Mix it well.
Serve with Rice, Chips, Cheese, Cilantro, Avocado.

It was so good! I preferred it with Frito’s and Cheese, but it was pretty good with the rice too.

Here’s the Recipe:
3-4 chicken breasts
1 can black beans
1 can kidney beans
8 oz can tomato sauce
two 14.5 oz cans of diced tomatoes (I used one with dice onions and bell pepper and the other chipotle style)
1 package taco seasoning
1 Tbs chili powder
1 Tbs Cumin
1 chopped onion

Put all the ingredients in the Crock Pot. Cover and Cook on High for 6 hours or Low for 10 hours.

Crock Pot Teriyaki Chicken

Here is a new recipe I made this week. It turned out so good.

4 Frozen, Boneless, Skinless Chicken Breasts
20 oz can Pineapple Chunks
1/2 bag Frozen Asian Vegetables
1 cup Teriyaki Sauce
Cook on high for about 6 hours
Serve with Fried Rice

Crock Pot Burrito Bowl

I found recipes on Pinterest for Crock Pot Sante Fe Chicken and Crock Pot Taco Chicken Bowl.  Here is how I made mine:

4 or 5 frozen, boneless, skinless chicken breasts
16 oz jar of salsa
15 oz can black beans, rinsed and drained
8 oz frozen corn
1/4 tsp cayenne pepper
1/4 tsp oregano
1/2 Tbs onion powder
1/2 Tbs cumin
1 Tbs chili powder
14.5 oz can chicken broth

Cook on High for 6 hrs.  Shred chicken and return to crock pot.  Serve on rice with cheese, avocado, sour cream, cilantro, etc.

Crock Pot Cheesy Chicken

I have become a huge fan of the crock pot.  Seriously.  You put everything in and turn it on and dinner is done!  Whoever invented it deserves a big diet dr pepper! haha

I didn’t go to the store Saturday Night because I was lazy and didn’t want to.  So I started searching the internet and found this recipe for Cheesy Chicken from The Crockin Girls.

It was so easy to make and pretty tasty.  We served ours on instant mashed potatoes with green beans.  I had some leftovers today for lunch and ate it with Minute Brown Rice.  I think I like it better with the brown rice, but either way it was good.

Here is the recipe:
4 boneless, skinless chicken breasts (mine were frozen)
1 can cream of celery soup
1 can cheddar cheese soup
1 can evaporated milk

I put the cream of celery soup, cheddar cheese soup and evaporated milk in the bottom of the crock pot and whisked them together a little bit.  Then I placed my frozen chicken on top and turned the crock pot on high at 8 am — We we left for church at 9:10 (yes we were running way late…), I switched it over to the auto setting which cooks on high for 2 hours then goes down to low.  When I got home from church (and choir practice — I’ll leave the story of how I got talked into that for another day) at 1:30, I shredded the chicken and put it back in the crock pot and stirred it around.  I left the crock pot on low while we made the potatoes and green beans and then served them up!
