Sugar Cookies and Royal Icing

I’ve been asked for my Sugar Cookie and Royal Icing Recipe a lot lately, so I thought I’d do another blog post about it.

The possibilities are endless!

Here is the recipe:

1 cup butter – room temp
1 1/2 cup sugar
3 eggs
3 teaspoons vanilla
1 teaspoon baking powder
1/2 teaspoon salt

cream together and then add
4 1/2 cups flour

Put in a ziplock bag (make sure all the air is out of the bag) and refrigerate for at least 1 hour.

Flour your surface and roll into 1/4 inch thick.  Use Cookie Cutters to cut out shapes

Bake at 350 for 8-10 minutes

Cool Cookies completely before icing.

Here is my icing recipe:

2 lbs (1 full bag) Powdered (Confectioner’s Sugar)
1/3 cup + 1 Tbs Meringue Powder
3/4 cup warm water
1 1/2 – 2 Tbs Vanilla

Double Pumpkin Chocolate Chip Muffins

Here is a quick, easy and healthy recipe!

1 package Devils Food Cake Mix

 

1 can pumpkin

 

Mix together and add 1 cup chocolate chips

 

Put in Mini Muffin Wrappers and Bake at 350 for 10-12 min

 

Healthy and Delicious!

Scentsy Party

My sister had a Scentsy Party this past weekend and put me in charge of food…I had her decide on the menu and then I went to the store and bought it all.  Her and my Mom helped put it all together –

Oatmeal Scotchies

I am a huge fan of oatmeal scotchies.  They are one of my favorite cookies.  Here is the recipe.

3/4 cup shortening
1 cup firm packed brown sugar
1/2 cup sugar
1 egg
1/4 c water
1 teaspoon vanilla
combine and beat until smooth and creamy, then add the following ingredients
3 cups uncooked oats
1 cup flour
1 teaspoon salt
1/2 teaspoon baking soda
1 cup butterscotch chips
Bake for 7-10 minutes at 350 degrees
